CHICKEN WITH BROCCOLI




500g chicken thigh fillets
cut into strips
1 clove garlic, crushed
1 small leek, sliced thinly
1 medium carrot sliced thinly
250g broccoli,chopped coarsly
1 tsp cornflour
1/2 cup chicken stock
2 tbp oyster sauce
1/2 cup unsalted roasted cashews
2 tbp vegetable oil

Heat half of the oil in wok or large frying pan, stir-fry chicken, in batches, until browned , remove from wok. Heat remaining oil in wok, stir-fry garlic, leek, carrot and broccoli until leek soft. Return chicken to wok with blended cornflour and stock, sauce and nuts stir until mixture boils and thickens slightly..Serve hot with steamed or butter rice
