Oat Bran Muffins




Oat bran is become popular recently as a source of fiber and one way to lower cholesterol level. It is lighter and dryer than normal oats. It can be served as cold breakfast cereal like oat bran flakes. Oat bran can also be added to bread , cakes and muffin recipes to lighten their effect and add fiber.


Oat Bran Muffins


2 cup oat bran
2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp ground cloves
1/2 tsp dry ginger powder
2 cups of milk
1/2 cup raisins
1/2 cup caster sugar/blackberry
1/4 cup oil/ghee
1 egg
salt to taste

Preheat oven to 425 degree and grease muffin tin. Mix oat bran, salt, baking powder, spices in a large bowl, in a saucepan bring the milk to boil. Blend milk, egg and oil  in a blender. Pour the mixture into dry ingredients and stir quickly using minimum strokes to avoid making muffin tough. Add raisins and stir. Fill greased muffin tins 3/4th full with batter. Bake at 425 degree for 20 to 25 minutes or until done.
